A SIMPLE CRANBERRY CAKE...



Without knowledge, I once grabbed cranberries for a leisure munching, imagining them to taste sweet by their look. 
Later I was scampering to look for a recipe to make something out of it and not let it go waste. 

Cranberries in reality taste too sour. However, they taste amazing when  dried or cooked. 
Cake seemed to be a great idea as I had eaten it before somewhere. 


This is going to be a very simple recipe of a homemade cake with just an addition of cranberries.

Let us go step by step: 

Even though originally the secret ingredient to cooking or baking is a smile that pirouettes on your face, specific ingredients are listed below.


1. Dry Ingredients:

  • Gather two small to medium sized cups of all-purpose flour.
  • One cup of fine sugar. You can replace sugar with honey/ maple syrup/ agave. If you replace sugar, add it later with wet ingredients (Step 2)
  • One spoon salt
  • One spoon baking powder
  • Give it a mix by simple whipping or with a hand blender or a cake mixer per your preference.

2. Wet Ingredients:

  • Half a cup of melted butter or clarified butter
  • Two eggs. If you prefer an eggless cake, skip this step
  • Vanilla extract - optional

  • Add a handful of washed cranberries. If you prefer, cut each in half. 



  • Glaze the baking pan with butter or place parchment paper to avoid burning on sides before pouring the batter in.




3. Bake:

  • Place the pan in oven
  • Bake for 1 hour and 15 minutes at 180 Celsius (356 Fahrenheit)
  • Remember to check your cake after 30 minutes or so
  • Let it bake until the crust looks golden brown or a little darker if you prefer a crunchier crust
  • Check the cake by inserting a fork or a toothpick to see consistency inside
  • It should come out clean
  • Refrigerate or let it cool before slicing the cake


It is important to let it cool before slicing.
Mine crumbled a bit because I gave in to impatience.

I am delighted to tell you that I typed the whole recipe with one hand while a piece of cake (on repeat) danced in the other.
What a piece of cake! 

For my next try with left over cranberries, I am thinking to add lemon or orange juice as well.
